[Problem] To provide a denitrification device and an aquatic organism rearing system that can efficiently denitrify rearing water for an aquatic organism under an aerobic condition. [Solution] A denitrification device 20 according to an embodiment of the present invention for rearing water used to rear aquatic organisms comprises: a filtration tank 21 to which the rearing water retained in a rearing water - tank 2 is supplied via a pump 3; a filter material 22 that is accommodated within the filtration tank 21 and on which denitrification bacteria for causing nitrogen in the form of nitrate in the rearing water to undergo reduction, and an intermittent water discharge unit 23 for intermittently performing an oxygen uptake operation by discharging the rearing water accumulated in the filtration tank 21 into the rearing water tank 2 to expose the filter material 22.
