In a vibration information detection step a probe is inserted into a sample of a foodstuff and any one among the acceleration, speed and displacement of the vibrations generated by the probe at said point are detected as vibration information (Step S1). In a frequency band separation step the vibration information is separated into vibration information for each of a plurality of frequency bands, using a band pass filter (Step S2). In a texture indication calculation step a computer is used to calculate a texture indication value on the basis of the vibration energy for a unit of time for each frequency band, from the vibration information for each frequency band, and the central frequency of the corresponding frequency band (Step S3).
