発明の概要(英語) The present invention pertains to a method for enhancing the fermentation capacity and ethanol yield of yeast. Specifically, the present invention pertains to: a method for enhancing the fermentation capacity of yeast that involves causing the decrease or loss of the vacuolar transporter chaperone complex (VTC complex) function in yeast; a fermentation product production method using yeast that involves carrying out alcoholic fermentation in conditions wherein the VTC complex function in the yeast is decreased or lost; a fermentation yeast preparation method that involves causing the decrease or loss of the VTC complex function in yeast by introducing a genetic mutation; yeast wherein the VTC complex function has been decreased or lost due to genetic mutation; and a screening method for drugs that enhance the fermentation capacity of yeast.
従来技術、競合技術の概要(英語) BACKGROUND ART
In recent years, yeast Saccharomyces, cerevisiae (Saccharomyces cerevisiae) in, vacuoles (hereinafter 'VTC complex') complex was found. Complex VTC, Vtc1p, Vtc2p, Vtc3p, Vtc4p formed by the protein complexes. VTC complex, or in maintaining the stability of the proton ATPase liquid , protein transport, , accumulation of liquid into the alveoli of the polyphosphoric acid has been reported to be involved in (non-patent document 1, 2, 3, 4). Which genes in yeast is associated with the alcohol fermentation is not elucidated, alcohol fermentation VTC and relevance of the complex is not reported.
